Could someone please tell me the difference between the Vigor 120 and the Vigor 120 V2.

Almost certainly functionally identical but some component has changed so requires different firmware.

It's the Annex B version of the Vigor 120, so it would be fairly useless in the UK, since we use Annex A exclusively over here for ADSL.
