I have a 2820n connected to a AP-700 in AP Bridge-WDS mode to improve the wireless coverage throughout my house. All works perfectly.
I have a spare NAS box which I would like to utilise, but don't want it in the room where the main 2820n router (and switch) reside.
Is there any reason why I can't have it accessible on the network by plugging into the ethernet port on the AP700? I use AP Briidge-WDS mode so I can bind IP and MAC addresses - the NAS box would retain a fixed IP address.

That'd work, since you're using WDS bridge, it'll pass through the MAC address for the NAS properly and when in WDS, both the ethernet and wireless would go across the bridge simultaneously.
