Use a normal switch in your lab to connect all your lab machines together.

On the lab server, set the DHCP to use the VDSL router has your default gateway, and if the want the lab server to run DNS you'll need to configure it appropriately.

Agreed. Also disable inter-lan routing (LAN >> General Setup) on the 2760n so no traffic passes from LAN2 to LAN1.

Brilliant support, thank you so much.

The below information has been provided by Draytek Support, via email. I have completed the following.....

create 2 VLANs on V2760 (VLAN0: P1-P3 all SSID - LAN1, VLAN1: P4 - LAN2)
it can be done under LAN >> VLAN page, remember that you have to press ok to save the settings. This change requires the reboot
- enable LAN2 on V2760 with interface IP address of e.g. 192.168.2.254 (DHCP disabled). This change requires the reboot
- connect 2830 via Ethernet cable from e.g. LAN1 to V2760 LAN P4
- make sure that LAN1 on V2830 is set to 192.168.2.1, DHCP server is enabled and Gateway IP Address is 192.168.2.254 (V2760 IP address).

The above has worked fine, however, I did have to change the Subnet Mask on the 2830n to 255.255.254.0, as this is only on my 2012R2 server, which is providing DHCP and DNS within the network 192.168.2.10, for my lab.

This has now been resolved. Once again, thank you all for your help :).
