I notice that the "Downloads & Resources" page for the 2760 says:

Is this a product that exists in two different 'flavours', with different functionality - like the Vigor 130 :?:

Yes, actually 3! Thankfully the later models simplified things a bit. The initial Vigor 2760 had a different type of firmware from DrayOS, based on OpenWRT / Linux. That had limitations but I think that's what your manual excerpt is from, or just an oversight (copy/paste error?).
Then later, the Vigor 2760 moved to DrayOS for a number of reasons, the UK version of the 2760 on DrayOS is different from the International version. But the DrayOS version of the 2760 in all locations, doesn't support load balancing. You do need the higher up models for multi-WAN at the same time.

Thanks for the info guys, yes it appears that you can't run WAN1 and 2 at the same time, the active one disables the other. Confirmation here - https://www.draytek.co.uk/products/soho/vigor-2760#overview under the "Cable Modem and Ethernet WAN Compatible - New" heading which says:

The other 3 Gigabit LAN ports (1-3) remain available for normal LAN connectivity. Note, you cannot have Ethernet WAN and ADSL/VDSL enabled at the same time; if Ethernet WAN is enabled, the ADSL/VDSL port is disabled (and vice versa).

So, 28xx series upgrade required then :D
